If a record label signed an artist why would they just have them sitting there and not release their album. And sometimes I hear that the artist wants to get released from their contract but the label wont grant that either why do they do this

Because the record label might not think the artists album is good enough. They won’t release it if they don’t stand a chance of making a healthy profit from it in sales. A record label would also prefer to sue an artist for breaking their contract and make money that way, instead of just releasing them from their contract for free. It’s all about money, unfortunately.
