The University of Miami (UM) in the US is a really good university for music in general. They have a really good program for music engineering which is basically music production. They teach you how to mix, record, and do signal processing.
Otherwise, if you are looking in Canada, Carlton has a good music program if you want to get into production. The link is provided in the source list. The University of Toronto has a strong music program, especially for performance. Good luck!
