Artists like Blink 182, Avril Lavigne, and Taylor Swift are less deserving of record contracts than Vanilla Ice was, yet their longevity has surpassed the Iceman. It makes me think that if Vanilla Ice released music in 2005 that sold, he’d be making music today and collaborating with somebody like Drake.

I don’t believe so.
He had one hit, and that was Ice Ice Baby, which he ripped off from “Under Pressure.”
Secondly, he’s still making music, but it’s got a “rock” vibe now, apparently.
