how does a music producer get paid in royalties when they only produced a few of the tracks on an album, do they still get a percentage of the retail price ? so what about individual itunes downloads of songs what percentage do they normally get from those ?

Depends. If you are doing a band or artist who is not on a label, they pay you directly but if you are doing a signed band, the label will pay you accordingly!
